Apple Harvest Muffins recipe

I don't know about you, but the arrival of October this week made my soul smile. I love Fall with every fiber in my being.

I put out my Fall decorations in September. I couldn't wait to get my pumpkins out.


 
I'm trying this Apple Harvest Muffins recipe this weekend and wanted to share. One muffin is 98 calories so you can get your Fall sweet fix without the extra calories. Love. Love. Love.

Total Time: 28 min.
Prep Time: 10 min.
Cooking Time: 18 min.
Yield: 12 servings, 1 muffin each
 
Ingredients:
Nonstick cooking spray (optional)
1½ cups whole wheat flour
½ cup wheat bran (or oat bran)
1 Tbsp. baking powder
½ tsp. baking soda
¾ cup apple butter, no sugar added
½ cup low-fat buttermilk (or nonfat plain yogurt)
2 large egg whites
1 medium apple, chopped (about 1 cup)
½ cup chopped pitted prunes
 
Preparation:
1. Preheat oven to 350° F.
2. Prepare twelve muffin cups by lining with muffin papers or coating with spray.
3. Combine flour, bran, baking powder, and baking soda in a medium bowl; mix well. Set aside.
4. Combine apple butter, buttermilk, and egg whites in a large bowl; mix well.
5. Add flour mixture to apple butter mixture; mix until just blended.
6. Add apples and prunes; mix until just blended.
7. Divide batter among twelve prepared muffin cups.
8. Bake for 16 to 18 minutes, or until golden brown and tester inserted into the center comes out clean.
9. Transfer muffins to rack; cool.

Banana Bread

Snow days....mean BAKING time for our house. 


There are not any complaints either.


Jaxon LOVES to help in the kitchen. He's getting really good at it too. I don't have to beat anything these days. It's marvelous.

Christmas Love Day 10–Saturday Morning German Pancakes ((recipe))

Happy Saturday to you! Hope your weekend is off to a great start. I don’t know why I’m on a recipe kick lately but I wanted to share another food goodie today.

I had never heard of German Pancakes until last year. I read about them on a food blog and then researched the recipes of different ones. I had to try them out. They are sooooo good. And they are cheap, anyone usually has the ingredients on hand and they are SUPER easy.
I love pancake breakfasts, but I don’t like standing over a hot griddle for 20 minutes to cook them. Yuck and boring. And for just Jaxon and I --- it’s kind of silly to do. So these are the perfect alternative.
They take about 5 minutes to make and 25 minutes to bake. Super easy!
I love making them on Saturday mornings. And you know my Jaxy loves to help make them too!

I don’t know why they are called pancakes, because they don’t have the same texture. I think it’s better.

You can serve them with honey, agave nectar or syrup. We’ve had them with all three. They would be really great to experiment with and add various ingredients. For now, we love them with syrup drizzled over them.
I added them for the Christmas features because I thought they would be a super easy, cheap and fast breakfast for your houseguests. They are so delicious, they taste like a gourmet entrée and your guests would never know how simple they really are!

December Love Day 9–Make Yummy Crockpot Swiss Steak ((recipe))

Oh. My. Goodness. It is Friday. Today is my last day of normal classes. I have a 20 page fictional narrative due tonight. The rest I have finished. Then next week it’s finals. I am almost dooooooone. And wouldn’t you know, I’m sick as dog at the moment. What in the heck?
I’ve had the worst cold hit this week and I have to laugh about it. Because really, of course I would be sick for finals. Because nothing is easy. Ever. So I laugh, blow my nose and keep typing! Carry on! I’m so close I can taste it….and flu or not…this Mamma is finishing the semester with a bang.☺

I try to be open to different recipes, but sometimes cringe. I don’t like funky food with funky ingredients. I can’t help it. And weird meat recipes really gross me out. But this I had to try. We have never had this before and it was so good!
I thought it would be a great meal for the holidays. Your family will LOVE it!
The PLUS side: the meat is so tender it’s like a roast. And compared to the price of a roast, round steak is about half the cost. WOW! I love making roasts on the weekends but sometimes it seems a little to high for my budget. This we could have all the time. Yay!
It’s such a good comfort food. And I have to tell you something else. I hate bell peppers. Grody. If I eat fajitas, I pick out all the bell peppers and onions. Yeppers. I’m that girl.

But the flavor the bell pepper adds to this dish is just the best! I actually ate and enjoyed the bell peppers!!
I found the original recipe in my “Fix-It and Forget-It: Our Best Slow-Cooker Recipes 2011” cookbook. But changed it up for what I had on hand and wanted to make it with. You can change yours up too. I’ve seen other recipes that use carrots and celery, so based on your taste you can mix your veggies.
After making this, it tastes so good that I would rather have this than a roast. And now that I know what a frugal, delicious meal it can be, we will be having it more frequently in our casa! It could actually be a delicious Christmas meal to change up the traditional holiday menu this year!

Fall Recipe–Santa Fe Soup

Does Fall make you think about soups, stews and Crock-Pots? It does for ME!!! I get so excited about NEW Fall food recipes. And maybe not all new, but maybe those recipes that you haven’t made…since cooler weather…this time last year.
One of my favorites is Santa Fe Soup. You know I love Leslie of the Green Cattle Blog, and her Santa Fe Soup is MARVELOUS! I have tweaked it a little to make it for me and my Jaxy! It’s soooooooo good and relatively cheap and easy! If you are looking for something different to make for your sweet family this weekend…you ought to give it a try!

I just finished my third week of graduate school…and I still have all A’s…and my homework is all turned in early. Funny thing going back to school at 32…I’ve learned a little bit about getting stuff done EARLY! LOL!
I also finished a WAY-CUTE project that I absolutely CANNOT wait to share with you!!! Just look!!! I made everything…a camera strap…and a camera bag…for less than $25…pinky PROMISE! And I’m going to show you how to make one for yourself!!

What was cookin’ this past weekend!

Hidy-hoooooooo bloggie friends!! Hope this Monday finds you in SWELL spirits!! We had a great weekend in Easie Peasie land. I finished up a few projects before Jax got home, and we had some YUMMO FOOD!!
I finally put a mini-blind on my front door window. I h.a.t.e. hanging mini-blinds. I’ve been putting that one off for at least three months. LOL! And it’s not even really up “right.” But it works and that’s all that matters to this Mamma!

It looks a whole lot better than my scrap piece of fabric I had up!!
I finally painted a dresser that a friend gave me. I wanted to do turquoise but I had black on hand. So black it was!!

As I mentioned on Facebook, she’s our new coffee bar and craft storage dresser. My little casa only has two closets, so I use dressers in every room for extra storage!!

Her details turned out really cute – you just really can’t see it! Black furniture is way hard to capture in a photo!
I also hung a shelf that my little Madre gave me last week. She made it a few years ago. It’s way super cute!

On Sunday, I baked up a storm, which I haven’t done since Jax has been gone.

Iced coffee…my new favorite

Oh my oh my….do you get MESMERIZED by PIONEER WOMAN’S photography of her recipes. Good lord. It’s AH-mazing. I saw this picture and recipe the other day….and I haven’t been the same since.

It is NO secret that I have coffee issues. So I immediately began searching my cabinets for ingredients to make my own!!! I’ve always LOVED Frappuccino's but never tried just iced coffee. That picture made me drool…and I was certain is must be DELISH!!
I didn’t have an entire bag of coffee…but I had a little…plus I just couldn’t wait 8 hours for it to steep.
But….oh honey dew…I do have an espresso machine. (Thank you MAMMA!)
So here’s my version of PERFECT ICED COFFEE!!

And MIXED up THIS fine cup of ICED COFFEE!!!

PW used a LARGER Mason jar for hers….I couldn’t find an empty one to use…but I have a whole set of smaller mug versions. It’s summertime…MASON jars are a MUST for beverages!!!
Needless to say…this…is my new morning cup of JOE. I’m in LOVE!!
