2015 Goals! And my weight loss update!!

Hey blog fam! I have been so sporadic with posts and am EXCITED to get back on track for 2015. I have been consumed with my teaching and weightloss/fitness journey but I'm ready to share all my new changes in my life and can't wait to see what 2015 brings!!

 As you know, sarting in the Summer of 2014 I decided that I was going to change my life. I have struggled with weight my ENTIRE life. I have never known how to successfully keep it off or how to truly be healthy. After having 2 kids I found myself at my highest weight EVER and some seriously scary medical diagnosis that made me realize I HAD TO MAKE A CHANGE.

 It wasn't until finding Beachbody and becoming a Beachbody coach, that I finally conquered my weight and unhealthiness.

I have been busy learning about being a coach, working on my own health and workouts and finding my fitness destiny!

Since becoming a coach this summer, I have lost almost 30 pounds and I am still going. I plan to lose another 60 in 2015.

I posted this picture in December 2014 of my progress up until that point. I took my before picture with the purpose that it would be my BEFORE picture of this journey.

I cried for a long time when I put the two pictures together. Finally conquering my health was an answered prayer! I never thought I could do this!

 
I've since started Insanity Max 30 and am starting my 6th week with the program.
I have NEVER loved a program SO MUCH!
To be honest, I've never been consistent with one workout program all the way through. But I'm in a challenge group that keeps my motivated and accountable.
 I wake up at 4:00am to get my sweat on during the weekdays and as crazy at it sounds...I look forward to it!!
 
Each day I feel like a ROCKSTAR because I finish my workout.
 


When I first started I had to do the modified moves for almost the entire workout. Now I can do the regular moves. It's SO EXCITING to see progress!!!

 
After each workout, I am dedicated to drinking my Shakeology for breakfast. When I first started this journey, the only thing I could do regularly was my Shakeology. I've not missed a day since August 2014. It's what jumpstarted my weight loss. It's my daily dose of super nutrients and my lifeline.


 
 
I've NEVER been so successful at weight loss in my life. And my mission is to share this with anyone who is struggling as well. There is a way to succeed!! If I can do it...anyone can do it!!

New month! New goals!

It's a brand new month!


So far I've lost 25 pounds and I'm pushing for 10 more by Christmas.

 My goal is to lose at least 5 more before Thanksgiving.



Starting Monday, November 3 I am participating in my Team Boom "Fit before the Feast" challenge group.


I will be doing Les Mills Pump for my workout and drinking my Shakeology of course.


This is the first time EVER in my life that I'm waaaaay ahead of the New Year's weight loss resolutions. I plan to be at least 25 pounds lighter (50 pounds total) by the time I'm ringing in 2015!!

Apple Harvest Muffins recipe

I don't know about you, but the arrival of October this week made my soul smile. I love Fall with every fiber in my being.

I put out my Fall decorations in September. I couldn't wait to get my pumpkins out.


 
I'm trying this Apple Harvest Muffins recipe this weekend and wanted to share. One muffin is 98 calories so you can get your Fall sweet fix without the extra calories. Love. Love. Love.

Total Time: 28 min.
Prep Time: 10 min.
Cooking Time: 18 min.
Yield: 12 servings, 1 muffin each
 
Ingredients:
Nonstick cooking spray (optional)
1½ cups whole wheat flour
½ cup wheat bran (or oat bran)
1 Tbsp. baking powder
½ tsp. baking soda
¾ cup apple butter, no sugar added
½ cup low-fat buttermilk (or nonfat plain yogurt)
2 large egg whites
1 medium apple, chopped (about 1 cup)
½ cup chopped pitted prunes
 
Preparation:
1. Preheat oven to 350° F.
2. Prepare twelve muffin cups by lining with muffin papers or coating with spray.
3. Combine flour, bran, baking powder, and baking soda in a medium bowl; mix well. Set aside.
4. Combine apple butter, buttermilk, and egg whites in a large bowl; mix well.
5. Add flour mixture to apple butter mixture; mix until just blended.
6. Add apples and prunes; mix until just blended.
7. Divide batter among twelve prepared muffin cups.
8. Bake for 16 to 18 minutes, or until golden brown and tester inserted into the center comes out clean.
9. Transfer muffins to rack; cool.

Motivation Monday

It's a big week for me. Back to school on Friday with teacher convocation and then In-Service starts. Hannah Grace started daycare last week so we have already been in the school-flow of things. Early mornings and routine for our daily schedule. Although I am sad to see Summer come to an end, I love getting back into a routine. And I love thinking about the beauty of Fall just right around the corner.

{{Fitness Friday}}

I am one week into the #1500in31 #NOEXCUSES challenge.
 
 
It's been a tough challenge. To average that total I have to do at least 50 minutes of workouts daily. I have been splitting up my workouts to make it easier. I found this great arm workout via Skinny Mom and wanted to share it for today's Fitness Friday. I love free weight exercises because I can crank up my music and do them whenever and wherever I like.

Running updates too!

I think the last time I was on a blogging roll I had mentioned I wanted to run a 5K and build up to half marathons. Since I've been gone, I've ran two 5K races! I am so hooked too. I love it.

I ran the Zombie 5K run with my son...

 
 
I recently ran another local July 4th 5K and my kiddos went along in their double jogging stroller. It was soooo fun and my kids loved it!
 

My next run will be a ColorVibe 5K in the Fall. And I cannot wait!!! I am hoping to push up to running a 10K in the next year. And then move to a half marathon.

Right now I'm participating in the #NOEXCUSES challenge and working to get in 75 miles in this month. I need just 12.5 miles to finish! It's soooo exciting!!

 




We start a new challenge in August...1500 minutes of workout time.

Classroom Decorations

Hello friends!
So the biggest change other than Hannah Grace, the newest and most beautiful addition to our family, is that I am teaching. I will still have plenty of kiddo crafties, but there will be lot's of teaching crafties and goodies too.

I'm currently trying to brainstorm how I will decorate my classroom this year. I teach 11th grade AP/Dual-Credit English.

For last year's decorations, I found this garland idea on Pinterest. You use fishing line with a needle...and thread pom poms and cut-up pieces of drinking straws. So stinkin' cute!
 
I just stapled them to my bulletin board.
 
 
In this picture: I added gift paper to the front of my desk, oil cloth to the top of my desk and fabric on top of my smaller desk.
 
I'll share more decorations from last year soon and keep you posted on new decorations for this year!

Texas Beans & Chili…and hello!!

Hi there friends!!

I cannot believe I am blogging. What is blogging? Ha ha ha!

It has been such a nice break from EVERYTHING. But I definitely MISSED YOU GUYS!

We have SOOOO MUCH to catch up on! Let’s do COFFEE SOON!

To get back in the blog groove I thought I would share a chili recipe I made today. It is cold, rainy (turning snowy) here in West Texas and chili just HITS THE SPOT.

Texas Beans & Chili:

((please note I always create Hodge Podge Chili – meaning I always add a little of this and a little of that. But this is my  basic recipe.))

1 lb ground beef (you can use 2 lbs, I just only defrosted 1 lb)

1 T olive oil

2 cloves garlic, chopped

8 oz can tomato sauce

8 oz can whole tomatoes

15 oz can kidney beans

15 oz pinto beans

small can of chopped green chiles

3 T chili powder

1 t ground cumin

1 t ground oregano

1 t salt

pinch of red pepper flakes (you can use cayenne pepper, but I was out!)

6-8 cups of water (depending on your pan size)

pinch of cornmeal ((I didn’t have any other “thickener” on hand—I don’t even know if it worked LOL!))

Heat olive oil in a cast iron skillet. Toast garlic until slightly browned. Add meat and brown. Drain excess fat. Add remaining ingredients and simmer on medium for 2 hours or longer. I let my cook all afternoon and revel in all the yummo smells in my house.

A recent senior session…
